1 way of cooking:

Wash the peppermint thoroughly and shake off the water. Use only the leaves and the thinnest stems, cut off the thick stems.

Put all the components in an electric mixer, adding the minimum amount of water needed to form a homogeneous paste.
This chutney is best served chilled.

Cooking time - 15 min.

Mint Chutney

The recipe for this sauce is taken directly from the Indian cookbook, and for it you will need:

  • 3 cups chopped peppermint greens
  • 2 cups chopped green cilantro
  • 6 pieces of chopped hot green pepper
  • 1 chopped onion
  • ginger
  • 2 tablespoons of lemon juice

If you do not like spicy, then you can replace hot pepper with Bulgarian. Grind greens with onions, peppers and ginger (if fresh is used) - you can do this in a blender. If it turns out too dry, then add water. Now pour lemon juice into the mixture, season with salt, stir and arrange in jars. Serve this sauce to the table right away or leave it to brew.

Tomato Chutney

Another true Indian recipe. For the sauce you will need:

  • 2 kilograms diced tomato
  • 2 cups sugar
  • 1 cup vinegar
  • 4 tablespoons minced garlic
  • 2 tablespoons raisins
  • chili powder
  • ginger
  • dried hot peppers
  • fresh hot peppers
  • salt

And again, if you do not eat spicy, feel free to replace chili and bitter peppers with Bulgarian and paprika. The cooking method is very simple: you need to mix all the ingredients, put them in a thick-walled pan and cook over low heat until the chutney thickens. Arrange hot chutney in banks and tighten tightly.
